Kahisu: Japanese Vinegar Drink Packaging

An Artistic Design for Ethical Choice

Kahisu is a Japanese vinegar drink with a unique twist. Created by designer Shinji Arashigawa, this innovative beverage combines the flavors of traditional vinegar drinks with the bitterness of bitter orange peels. Inspired by the works of artists Paul Gauguin and Claude Monet, Kahisu is not only a delicious drink but also a work of art.

Kahisu stands out from other vinegar drinks with its ethical message. The bitter orange peels used to make the drink were previously discarded after the juice was extracted. By fermenting these peels to produce vinegar, Kahisu promotes food recycling and reduces waste. The design concept behind Kahisu is "Artistic Design for Ethical Choice," with a focus on sustainability and a better future for generations to come.

To complement the novel taste and artistic aspect of Kahisu, the packaging was carefully designed. The drink is housed in a champagne-style bottle, a departure from the typical packaging of Japanese vinegar drinks. The label features graphics inspired by the paintings of Gauguin and Monet, reflecting the fruity flavor of Blend G and the fresh and refreshing taste of Blend M.

The production of Kahisu incorporates advanced technology. The fermentation process to create vinegar from bitter orange peels was developed specifically for this drink. In line with the ethical message of the brand, recycled materials were used for the bottle and label, minimizing the environmental impact.

The specifications of the Kahisu packaging are as follows: the bottle measures 81mm in width, 81mm in depth, and 241mm in height. The label has dimensions of 247mm in width and 70mm in height. The box, designed to hold two bottles, measures 300mm in width, 170mm in depth, and 85mm in height.

Kahisu aims to create a unique drinking experience. It can be enjoyed on its own or mixed with sparkling water or spirits like whiskey, gin, or rum. The design encourages consumers to share the excitement of drinking Kahisu with their loved ones and contemplate the future, as expressed in the brand's ethical message.

The Kahisu project began in Hiroshima, Japan, in September 2021 and the drink has been available for purchase online since August 2022. The client for this project is a long-established vinegar manufacturer with a history dating back to 1582.

Extensive research was conducted to develop the distinctive taste of Kahisu. Through Kansei engineering experiments, the proportions of taste components were carefully controlled to achieve a bittersweetness reminiscent of black coffee. The design of the bottle, cap, and label underwent multiple iterations to convey the deep and artistic taste of the drink, as well as its ethical message.

The development of Kahisu presented several challenges. The project team aimed to create a vinegar drink that would stand out from existing products in terms of taste and packaging. With the concept of "Artistic Design for Ethical Choice" as their guide, the team of researchers, manufacturers, and designers collaborated to achieve the final form of the drink and its packaging.

Kahisu has received recognition for its outstanding design. It was awarded the Bronze A' Design Award in the Packaging Design category in 2023. This prestigious award honors designs that demonstrate creativity, resourcefulness, and a commitment to improving quality of life. Kahisu's unique blend of art, science, design, and technology sets it apart as a beverage that not only tastes great but also contributes to a better world.
